The white chocolate chip pumpkin cookie recipe is quite a mouthful to say. Although, when you taste one of these cookies it will all be worth it.
Ingredients
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon baking soda
2 sticks (1 cup) salted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 cup canned pumpkin
1 large egg
2 teaspoons vanilla extract
1 (12 ounce) package white chocolate chips
2/3 cup coarsely chopped macadamia nuts

Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease cookie sheets; set aside.
Step 3: In a medium bowl, whisk together flour, cinnamon, cloves, and baking soda; set aside.
Step 4: In a large bowl, cream together butter and sugars with an electric mixer.
Step 5: Beat in pumpkin, egg, and vanilla extract until blended.
Step 6: Gradually beat in flour mixture until well blended.
Step 7: Stir in white chocolate chips and nuts.
Step 8: Drop by rounded tablespoon onto prepared cookie sheets.
Step 9: Slightly flatten with back of spoon.
Step 10: Bake 12-14 minutes, or until centers are set. Cool on cookie sheets for 2 minutes before transferring to cooling surface.
Makes about 36 cookies.
