Trail Mix Cookie Recipe

Reminiscent for the great outdoors, this trail mix cookie recipe can take you there. Load up the surfboard or backpack, this cookie is stuffed full of raisins, chocolate candies, peanuts, peanut butter, and oats!

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 cups quick cooking oats
1 cup granulated sugar
1 cup brown sugar (packed)
1 cup peanut butter
1/2 cup (1 stick) salted butter, softened
1/2 cup shortening
2 teaspoons vanilla extract
2 large eggs
1 1/2 cups candy-coated chocolate candies
1 cup peanuts
3/4 cup raisins

Step 1: Preheat oven to 375 degrees F.
Step 2: In large bowl, whisk together flour, baking powder, baking soda, and oats; set aside.
Step 3: In extra large bowl, with electrci mixer beat sugars, peanut butter, butter, and shortening until well combined.
Step 4: Beat in eggs and vanilla extract.
Step 5: Add dry mixture to wet, combine well.
Step 6: Stir in chocolate candies, peanuts, and raisins.
Step 7: Drop by tablespoons onto ungreased cookie sheets, and flatten slightly.
Step 8: Bake for 10 minutes, or until light brown.
Step 9: Remove from oven and let cool for 1 minute before removing cookie from sheet.

Makes 54 cookies.
