The toffee almond cookies recipe is rich with toffee bits and sliced almonds! It’s amazing how delicious these cookies are!
2 sticks (1 cup) salted butter, softened
1 cup vegetable oil
1 cup granulated sugar
1 cup powdered sugar
1 teaspoon almond extract
4 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
2 cups sliced almonds
1 package English toffee buts (10-ounces)
Step 1: Preheat oven to 350 degrees F.
Step 2: In a medium bowl, whisk together the flour, baking soda, cream of tartar, and salt; set aside.
Step 3: In a large bowl, with an electric mixer set on medium-high speed cream butter for 30 seconds.
Step 4: Beat in vegetable oil and sugars.
Step 5: Add eggs, one at a time, beating well after each addition.
Step 6: Beat in almond extract.
Step 7: Gradually add flour mixture to creamed mixture. Mix until just combined.
Step 8: Stir in the almonds and toffee bits.
Step 9: Drop by teaspoons 2 inches apart on ungreased cookie sheets.
Step 10: Bake for 10-12 minutes or until golden brown. Transfer cookies immediately to a cooling surface.
