The spiced oatmeal cookie recipe combines the great taste of an oatmeal cookie with just a hint of spice, resulting in a very unique flavor!
1 cup shortening
1 cup granulated sugar
1 cup packed brown sugar
1 teaspoon vanilla extract
3 cups quick-cooking oats
1 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
Step 1: Preheat oven to 350 degrees F.
Step 2: In a medium bowl, whisk together the flour, oats, salt, baking soda, ground nutmeg, and ground cinnamon; set aside.
Step 3: In a large bowl, cream together the shortening and sugars with an electric mixer set on medium-high speed.
Step 4: Add eggs, one at a time, beating well after each addition.
Step 5: Beat in vanilla extract.
Step 6: Gradually add the flour mixture to the shortening mixture. Beat until combined.
Step 7: Drop by tablespoons 2 inches apart onto ungreased cookie sheets. Flatten with fork.
Step 8: Bake for 10-12 minutes or until lightly browned. Immediately transfer cookies to a cooling surface.
