The royal icing recipe is perfect for gingerbread houses.
4 egg whites
4 cups powdered sugar
1 teaspoon lemon extract
Step 1: In a large bowl, with an electric mixer on high speed, beat egg whites until foamy.
Step 2: Gradually mix in the powdered sugar and lemon extract. Beat on high until thickened.
Note: This icing is perfect for gingerbread houses or any other cookie-like structure. When this icing dries it will become very hard, making it resistant to cracks and damage. Use in small batches to avoid it from drying out to fast.
