No Bake Fruit Crisps Recipe

The no bake fruit crisps recipe has a great fruit flavor and a crunch that children love!


1 package (8 ounces) chopped dates
1/2 cup flaked coconut
1/2 cup granulated sugar
1/4 cup salted butter
1 egg, lightly beaten
1 pinch of salt
1 teaspoon vanilla extract
1 1/2 cups crisp rice cereal
1/2 cup chopped walnuts
Colored sugar

Large skillet
Waxed paper

Step 1: In a large skillet, combine dates, coconut, sugar, butter, lightly beaten egg, and salt.
Step 2: Cook and stir over medium heat until mixture thickens and reaches about 160 degrees F., about 5 minutes.
Step 3: Remove from heat; stir in vanilla extract, rice cereal, and chopped walnuts.
Step 4: Let cool for 10 minutes.
Step 5: With slightly moistened fingers, shape tablespoons into fruit shapes; roll in colored sugar. Place on wax paper.

Note: If desired different colors of sugar can be used for different fruit shapes. Leaves can also be piped on for a more decorative look.

Makes 4 dozen cookies.
