The mocha chip cheesecake bars recipe is easy to make with the irresistible flavors of chocolate chips and cheesecake!
1 (18 ounce) package refrigerated chocolate chip cookie dough
1 (8 ounce) package cream cheese, softened
1/3 cup granulated sugar
1 large egg
1 tablespoon instant coffee crystals
1 teaspoon water
1 teaspoon vanilla extract
1/2 cup miniature semi-sweet chocolate chips
13x9x2-inch baking pan
Step 1: Preheat oven to 350 degrees F.
Step 2: For crust, in a 13x9x2-inch baking pan crumble cookie dough. Press evenly into bottom of pan; set aside.
Step 3 In a large bowl, beat together cream cheese, sugar, and egg with wooden spoon until smooth.
Step 4 In a small bowl, stir together coffee crystals, water, and vanilla extract until crystals dissolve.
Step 5 Stir coffee mixture into cream cheese mixture.
Step 6 Spread mixture evenly over crust.
Step 7 Sprinkle with chocolate chips.
Step 8 Bake 20 minutes or until completely set. Cool before cutting into bars. Store in refrigerator.
