Mint Cookie Slices Recipe

The mint cookie slices recipe turns out a cookie that will deliver a refreshing midday pick-me-up! These little treasures are also great with a hot cup of tea or coffee!


2 sticks (1 cup) salted butter, softened
3/4 cup granulated sugar
1 egg
1/4 teaspoon peppermint extract
2 1/4 cups all-purpose flour
1/2 teaspoon salt

1 cup mint chocolate chips
4 teaspoons shortening

Large bowl
Medium bowl
Small microwave safe bowl
Plastic wrap
Cookie sheets

Step 1: In a medium bowl, whisk together the flour and salt; set aside.
Step 2: In a large bowl, with an electric mixer set on medium-high, cream together the butter and sugar.
Step 3: Beat in egg and peppermint extract.
Step 4: Add flour mixture to creamed mixture; blend well.
Step 5: Shape dough into two 8-inch rolls; wrap each in plastic wrap.
Step 6: Refrigerate for 3 hours or until firm.
Step 7: Remove dough from refrigerator and preheat oven to 350 degrees F.
Step 8: Unwrap and cut into 1/4-inch slices.
Step 9: Place 1 inch apart on ungreased cookie sheets.
Step 10: Bake for 9-10 minutes or until the edges begin to brown. Immediately transfer cookies to a cooling surface.
Step 11: In a small microwave safe bowl, combine semisweet chocolate and shortening, heat on medium-high setting until melted; stir until smooth.
Step 12: Using the tines of a fork, drizzle chocolate over cookies.

Makes 6 dozen cookies.
