The easy lemon cookie recipe is just what it says it is. A light and delicious cookie that’s a breeze to make!
2/3 cup Miracle Whip dressing
1 pkg. (2-layer size) yellow cake mix
2 teaspoons grated lemon peel
2/3 cup ready-to-spread vanilla frosting
4 teaspoons lemon juice
Step 1: Preheat oven to 375 degrees F.
Step 2: Lightly grease cookie sheets; set aside.
Step 3: In a large bowl, beat dressing, cake mix, and eggs with an electric mixer on low speed until just moistened.
Step 4: Add lemon peel, beat on medium speed for 2 minutes.
Step 5: Drop by teaspoonfuls 2 inches part onto prepared cookie sheets.
Step 6: Bake for 9-11 minutes or until lightly browned (cookies will still appear soft). Let cookies set for 1 minute before transferring to a cooling surface. Cool completely before frosting.
Step 7: In a medium bowl, mix frosting and lemon juice until well blended; spread onto cookies.
Note: If desired, powdered sugar can be sprinkled on top of cookies instead of using frosting.
