The coconut Christmas drops cookie recipe turns out a very colorful and festive cookie. If you’ve been good, maybe Santa will place one of these coconut treats under your tree!
2 sticks (1 cup) unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1/4 cup milk
1/2 teaspoon vanilla extract
1/2 teaspoon coconut extract
1/4 teaspoon salt
2 cups all-purpose flour
1 cup sweetened shredded coconut
1 cup red and/or green candied cherries, coarsely chopped
2 cups sweetened shredded coconut
Step 1: Preheat oven to 350 degrees F.
Step 2: In a large bowl, beat butter, sugar, egg, milk, vanilla extract, coconut extract, and salt with an electric mixer on medium speed until blended (may look slightly lumpy).
Step 3: On low speed, gradually add flour until combined.
Step 4: Stir in 1 cup coconut and cherries.
Step 5: Place 2 cups of coconut into small bowl.
Step 6: Drop teaspoons of dough into coconut; turn gently to coat. Place 2 inches apart on ungreased cookie sheet.
Step 7: Bake 15 minutes or until coconut is toasted and cookie are set. Cool on cookie sheet for 2 minutes, then transfer cookies to cooling surface.
