The chocolate coconut oatmeal cookie recipe combines classic flavors resulting in a great tasting cookie!
2/3 cup shortening
1 cup sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
6 ounces (1 cup) semi-sweet chocolate chips, melted
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 cup quick-cooking oats
1 cup flaked coconut
Microwave safe bowl
Step 1: In a microwave safe bowl, melt chocolate chips on medium-high setting until creamy and smooth; set aside.
Step 2: In a medium bowl, whisk together flour, salt, and baking soda; set aside.
Step 3: In a large bowl, cream together shortening and sugar.
Step 4: Stir in melted chocolate chips.
Step 5: Gradually add flour mixture until just combined.
Step 6: Stir in oats and coconut.
Step 7: Refrigerate for 1 hour.
Step 8: Preheat oven to 350 degrees F.
Step 9: Drop by heaping tablespoons onto ungreased baking sheet 2 inches apart.
Step 10: Bake 11-13 minutes or until firm. Let cookies set for 1 minute before transferring to cooling surface.
