The chocolate cashew crunch cookie recipe will surely impress your friends. This cookie is an elegant lace circle made up of nuts and sugars, then dipped into chocolate.
Ingredients
1/2 stick (1/2 cup) unsalted butter
1/3 cup (packed) light brown sugar
1/4 cup light corn syrup
1/2 cup finely chopped salted cashews
1/3 cup all-purpose flour
1 1/2 teaspoons vanilla extract
Chocolate Dipping Sauce:
6 ounces milk chocolate chips (about 1 cup)
Hardware
Small saucepan
Small metal bowl
Cookie sheet
Step 1: Preheat oven to 350 degrees F.
Step 2: Butter and flour cookie sheet; set aside.
Step 3: In a small saucepan, melt the butter over medium heat.
Step 4: Add the brown sugar and corn syrup, then bring to a boil over medium heat, stirring constantly until sugar dissolves.
Step 5: Remove from heat, stir in the cashews, flour, and vanilla extract.
Step 6: Drop the batter in 1/2-teaspoon mounds 2 inches apart onto prepared cookie sheet.
Step 7: Bake for 8-10 minutes, or until browned, rotating the cookie sheet back to front after 4 minutes.
Step 8: Pull from oven and let cookies set on sheet for 30 seconds, then transfer to wire rack to cool.
Chocolate Dipping Sauce:
Step 1: In a small metal bowl, set over small saucepan, melt the chocolate over hot, but not simmering water.
Step 2: Dip each cookie halfway into chocolate and return to wire rack.
Makes 24 cookies.
