Chinese Fortune Cookie Recipe

The Chinese fortune cookie recipe is similar to the ones found in your favorite restaurant, but with these you get to write your own fortunes!


1 egg white
1/8 teaspoon vanilla extract
1 pinch of salt
1/4 cup all-purpose flour
1/4 cup granulated sugar

2 x medium bowls
Cookie sheets
3 x 1/2-inch paper strips with fortunes hand written or printed from computer

Step 1: By hand or with a computer make fortunes on 3 x 1/2-inch size sheets of paper.
Step 2: Preheat oven to 400 degrees F.
Step 3: Lightly butter cookie sheets; set aside.
Step 4: In a medium bowl, whisk together the flour, salt, and sugar; set aside.
Step 5: In a medium bowl, with an electric mixer beat the egg white and vanilla extract until foamy, but not stiff.
Step 5: Gently fold in flour mixture until blended.
Step 6: Place teaspoons of batter at least 4 inches apart on prepared cookie sheets. Tilt cookie sheet to spread batter around into 3-inch circles. Do not place to many cookies on each sheet, as cookies must be worked with when warm to shape, once cooled it is to late.
Step 7: Bake for 5 minutes or until cookies have turned golden brown in color around the circles 1/2-inch outer edge.
Step 8: Working quickly, place cookie on wood cutting board or any heat resistant surface. Place fortune in center of cookie and fold over to make a semi-circle. Pinch edges at top of circle to seal. Place the bottom of each semi-circle cookie at the mid-point over the edge of a drinking glass, and bend pointed sides towards each other. Place cookie in muffin tin, egg carton, or other device to keep cookie folded until cooled.
