The cherry snowballs recipe is a perfect one for the holidays, a tender cookie ball, covered with juicy coconut, and hidden inside is a maraschino cherry!
Ingredients
2 sticks (1 cup) salted butter, softened
1/2 cup powdered sugar
1 tablespoon water
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup quick cooking oats
1/2 teaspoon salt
36 maraschino cherries, well drained
Coating:
2 cups powdered sugar
1/4 – 1/3 cup milk
2 cups flaked coconut, finely chopped

Step 1: Preheat oven to 350 degrees F.
Step 2: In a medium bowl, whisk together the flour, oats, and salt; set aside.
Step 3: In a large bowl, with an electric mixer set at medium-high speed, cream together the butter, sugar, water, and vanilla extract.
Step 4: Gradually add flour mixture to creamed mixture; mixing well.
Step 5: Shape a tablespoon of dough around each cherry, forming a ball. Place 2 inches apart on ungreased cookie sheets.
Step 6: Bake for 18-20 minutes or until bottoms are browned. Immediately transfer cookies to a cooling surface.
Step 7: When cookies are cool, in a medium bowl, combine 2 cups powdered sugar and enough milk to achieve a smooth dipping consistency.
Step 8: Place coconut into shallow dish.
Step 9: Dip cookies in coating and then roll in coconut.
Makes 3 dozen cookies.
