The butterscotch oatmeal cookie recipe is just a simple enhancement to the already great oatmeal cookie.
2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups quick cooking oats
1/2 (1 stick) cup salted butter, softened
1/2 cup vegetable oil
1 cup brown sugar (packed)
1 cup granulated sugar
2 large eggs
1 cup butterscotch chips
Step 1: Preheat oven to 325 degrees F.
Step 2: In medium bowl, whisk together flour, baking powder, baking soda, salt, and quick oats; set aside.
Step 3: In large bowl, with electric mixer, cream butter, oil, and sugars until smooth.
Step 4: Beat in eggs one at a time.
Step 5: Gradually stir in dry mixture to wet.
Step 6: Stir in butterscotch chips.
Step 7: Drop by teaspoon onto ungreased cookie sheet.
Step 8: Bake 10-12 minutes, or until edges are golden brown.
Step 9: Remove from oven and let set for 1-2 minutes before removing to cooling rack.
