Brown Sugar Shortbread Cookie Recipe

After making several shortbread recipes, we decided that this brown sugar shortbread cookie recipe was the best.


Special Note: Shortbread recipes are simple to make, but with the addition of glazing sauce this recipe was put into the fancy cookie recipe section. Also, the higher the quality of butter used the better this recipe will taste.

2 sticks (about 1 cup) salted butter softened
1/4 cup (packed) light brown sugar
2 teaspoons vanilla extract
2 cups all-purpose flour

Chocolate Glaze:
1 tablespoon salted butter
6 ounces semi-sweet chocolate chips (about 1 cup)
4 ounces pecans, finely chopped (about 1 cup)

Large bowl
Small bowl
Wax paper
Microwave safe bowl
Cookie sheet

Step 1: Preheat oven to 350 Degrees F.
Step 2: Add chopped pecans to small bowl; set aside.
Step 3: In a large bowl, cream butter and brown sugar with electric mixer at medium speed.
Step 4: Add vanilla extract and flour, then blend thoroughly on low speed.
Step 5: Shape level teaspoons of dough into 1-inch balls, then form into logs 2 inches in length and 1 inch wide. Place on ungreased cookie sheet, 2 inches apart.
Step 6: Bake for 17-19 minutes, or until cookies spread out and turn a light golden brown. Transfer to cool.

Chocolate Glaze:
Step 1: Melt butter and chocolate chips in microwave safe bowl. Stir until smooth and creamy.
Step 2: Dip top of each cookie into chocolate, then into pecans.
Step 3: Place cookies on wax paper then refrigerate to set chocolate.
