The apple walnut cookie recipe makes a light cookie packed with flavor! These are great cookies to bake in the fall when the green apples are tart!
2/3 cup butter-flavored shortening
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup finely chopped peeled tart green apple
3/4 cup chopped walnuts
Step 1: Preheat oven to 375 degrees F.
Step 2: Lightly grease cookie sheets; set aside.
Step 3: In a medium bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt; set aside.
Step 4: In a large bowl, cream together shortening and sugar with an electric mixer set on medium.
Step 5: Beat in egg and vanilla extract.
Step 6: Mix in half of flour mixture.
Step 7: Stir in chopped apple, and walnuts.
Step 8: Stir in remaining flour mixture until just combined.
Step 9: Drop by heaping teaspoonfuls onto prepared cookie sheets 3 inches apart.
Step 10: Bake for 13-15 minutes or until golden brown. Remove cookies immediately and transfer to cooling surface.
