Almond Bliss Cookie Recipe

If you love almonds this recipe is for you. The Almond Bliss cookie recipe blends almonds together three different ways to make a spectacular cookie.


3/4 cup granulated sugar
1 stick (1/2 cup) salted butter, softened
1 large egg
1/2 teaspoon almond extract
1 ounce almonds, ground in blender or food processor (about 1/4 cup)
1 cup all-purpose flour

4 ounces sliced almonds (about 1 cup)

Note: The flavor of this cookie is great alone but can be enhanced by a chocolate dip or drizzle.

Chocolate Dipping Glaze:
1/4 cup heavy cream
6 ounces semi-sweet chocolate chips (about 1 cup)
2 teaspoons light corn syrup

Large bowl
Small bowl
Microwave safe bowl
Cookie sheet
Wax paper

Step 1: Preheat oven to 350 degrees F.
Step 2: Add sliced almonds to small bowl; set aside.
Step 3: In a large bowl, blend butter and sugar with electric mixer until mixture forms a grainy paste.
Step 4: Add egg and almond extract. Beat at medium speed until light and fluffy.
Step 5: Add ground almonds and flour, and blend at low speed just until combined.
Step 6: Form dough into 1 1/2-inch balls and roll in sliced almonds, coating each ball thoroughly.
Step 7: Place balls on ungreased cookie sheet, 2 inches apart.
Step 8: Bake for 15-18 minutes or until cookies are slightly brown along edges.
Step 9: Immediately transfer cookies to cool surface cover with wax paper.

Chocolate Glaze:
Step 1: Scald cream in microwave safe bowl.
Step 2: Stir in chocolate chips and corn syrup. Let stand for 15 minutes.
Step 3: Mix glaze until smooth and creamy.
Step 4: When cookies are completely cool, dip half-way in chocolate glaze or drizzle designs on top of each cookie.
Step 5: Refrigerate the cookies on wax paper until glaze has set-about 10 minutes.
